A collaborative work with Au Jus vzw!
Using sound, film, and food, we (Rosa Areal, Marlena von Wedel, Callaz and myself) imagined together what a speculative future could look like—one beyond capitalist and extractivist logics.
In line with this idea, I proposed a fully plant-based menu. I speculated that in the future, we would have moved beyond exploiting non-human animals, and everyone would be regarded as equal. To connect with local economies and territories, I focused on local, seasonal vegetables and grains. To inform and inspire my proposal, I researched food from around the world, learning techniques and recipes from diverse regions. I considered how we could apply these techniques while respecting their heritage and connecting with local produce. I drew inspiration from my own Portuguese background, such as bolo do caco, as well as from Lebanese cuisine, such as keshel el fouqara, and Ethiopian/Eritrean cuisine, such as injera. Through this research, I realized that futuristic food doesn't have to involve a high-tech or scientific approach with molecular or synthetic foods. Rather, it can be a way of reconnecting with local ingredients and forgotten recipes, as well as with those around us.
